In the gradebook, when editing grades in the Single View for a grade item, click the "Actions" dropdown and select "Bulk insert grades". Select any option: All grades or Empty grade. Alter the grade to display a value more than the range allowed for that activity. In this screenshot, the range for assignment is 0-100, but able to be altered to 99999.
