This is minor and there is a "workaround".

When a teacher tries to change the settings of a quiz to include a time limit, or to require a network address, or to use any question behaviour other than deferred feedback (with or without CBM), then the there is an warning in 'Allow quiz to be attempted offline using the mobile app' indicating It is not possible for a quiz to be attempted offline if it has a time limit, or requires a network address, or uses any question behaviour other than deferred feedback (with or without CBM). (which is correct) but the teacher cannot change the value to No.

(The "workaround" is to cancel the changes, then go back to settings, change 'Allow quiz to be attempted offline using the mobile app' to no and then add the include a time limit, or require a network address, or use any question behaviour other than deferred feedback (with or without CBM).)
