Users of GDPR Policy are currently not able to easily host multiple language policy documents.

A facility to handle a policy for each language pack installed on the site might be a relatively easy way to handle the issue within the Editing Policy Page.

Another possible answer might be to add an empty string identifier in to Language Strings/Packs that then can be edited by an admin should they choose. This way, the sites could host a Language Specific policy, for each of the language packs that they have installed on their site.
