      1/ set up email sending on your test server
      2/ do some actions that results in sending of emails (forgotten password, forum post, etc.) Try with sender/destination/subject being looong (>100 chars) and containing some UTF8 chars (accents, €, whatever).
      3/ verify received emails and their contents.
