See MDLQA-2090. If a quiz has a grace period set and the student just sits there until the grace period is over then clicks the submit button their quiz attempt is still marked as complete and counted.
It should either be marked "not submitted" or maybe automatically submitted at the end of the grace period.

CLONE - When time and a date are set, the student will be allowed extra time to submit when time expires during an attempt. When the grace period expires, if the student has still not submitted the attempt, it is "Never submitted".
